Here's how you do a LJ cut.

At the beginning of the cut, do this: {lj-cut}

At the end, put this: {/lj-cut}

To prevent it from making this entry into a cut, I replaced < and > with { and }.

It's also listed under the FAQ, under Journal entries. :)
